Saturday Brunch. Yum. We made oatmeal waffles this past Saturday and I have got to say I really liked the extra little crunch that the oatmeal provided, and man were they ever filling! We served with breakfast sausages and fruit salad, but really waffles are so versatile. You could serve with so many different types of fruit, jam, of just plain old syrup is great as well. This recipe is going into the favorites file at our house.

- 1/2 cups all-purpose flour
- 1 cup quick-cooking rolled oats
- 1 tablespoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 eggs, slightly beaten
- 1 1/2 cups milk
- 6 tablespoons butter, melted
- 2 tablespoons brown sugar
1. Mix eggs, milk, butter and brown sugar in large bowl.
2. Mix in dry ingredients, just until mixed. (should look like a big bowl of cold oatmeal).
3. Pre-heat waffle iron, use about 1/2 cup batter per waffle (depending on size of your waffle iron). Cook until brown and crispy.
4. Eat and enjoy!
