Wednesday evenings are now all about getting a fast meal on the table. I have enrolled my kids in swimming lessons and wouldn’t you know it, they are right over the dinner hour. This means we have to eat dinner at 4:30, or 7:30. As starving children probably aren’t conducive to getting a good swimming lesson in , we have decided to go the 4:30 route. Yes, I realize that is super early to eat dinner, but sometimes you just gotta do, what you gotta do. So this week it was waffles with breakfast sausage, and it was delicious!
Recipe from Southern Living Homestyle Cookbook
- 1 1/2 cups all-purpose flour
- 2 tsp. baking powder
- 3/4 tsp salt
- 1 tsp cinnamon
- 3/4 tsp ginger
- 1/3 cup packed brown sugar
- 2 large eggs
- 3/4 cup buttermilk
- 1/4 cup molasses
- 1 ripe banana, mashed
- 1/4 cup butter, melted
- 2 large bananas-sliced
- Maple Syrup
1. Beat sugar and eggs until sugar has dissolved and mixture is completely blended. Beat in butttermilk, molasses and mashed banana.
2. Stir in dry ingredients, just until combined. Stir in melted butter.
3. Heat waffle iron and spray with cooking spray. Cook waffles according to waffle maker directions.
4. Serve cooked waffles with sliced bananas and syrup.
5. Eat and enjoy!
